Sourdough, for me, is all about having fun and experimenting. I’ve always loved Chili’s mozzarella sticks, but one day I thought—why not make them at home, and why not use my homemade sourdough bread? Then came these Sourdough Mozzarella Sticks. They turned out even better than I imagined. They were so fun to make and truly filled my cup. It was one of those moments where I could just sit back and not take the world so seriously—because let’s be real, no one can be mad with a mozzarella stick in hand.

What You’ll Need:

  • 1 – 2lb block of low-moisture mozzarella
  • Half of a stale loaf of sourdough bread- cubed (for breadcrumbs)
  • 1/2 cup all-purpose flour
  • 3 eggs
  • 1/4 cup milk
  • Oil spray for air frying or neutral oil for frying

Homemade Sourdough Breadcrumbs

  1. Toast cubed sourdough at 350°F for about 15–20 mins until dry.
  2. Cool and pulse in a food processor until finely ground.
  3. Mix in:
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1 tsp Italian seasoning
    • 1/4 tsp black pepper
    • 1/2 tsp salt
    • Optional: 1/4 cup grated Parmesan for extra flavor

Cut & Prep the Mozzarella

  1. Slice the mozzarella block into thick strips (about 1/2″ wide, 3–4″ long).
  2. Freeze the strips for 30 minutes to help hold their shape when breaded.

Breading Process (Double-Dipped for Chili’s-Style Crunch)

Set up 3 bowls:

  • Bowl 1: 1/2 cup flour
  • Bowl 2: 3 eggs + 1/4 cup milk (whisked)
  • Bowl 3: Seasoned sourdough breadcrumbs

Steps:

  1. Coat frozen cheese strip in flour
  2. Dip in egg wash
  3. Coat in breadcrumbs
  4. Repeat: egg wash → breadcrumbs again (for thick, crispy crust)

Freeze Before Cooking

Place breaded mozzarella sticks on a parchment-lined plate or tray and freeze for at least 1 hour. You can also transfer to a freezer bag and store for up to 2 months.

How to Cook

Deep Fry:

  • Heat oil to 350°F
  • Fry 3–5 strips at a time for 1–2 mins until golden brown
  • Drain on a baking rack

Air Fryer:

  • Preheat to 400°F
  • Spray sticks with oil
  • Air fry 6–8 minutes, flipping halfway

Let cool slightly and serve with your favorite dipping sauce.

These are best served immediately but can be reheated if you want to take them to a party and share! In my experience, the sourdough breadcrumbs keep them crispy even hours later.

  • 1/4 tsp black pepper
  • Optional: 1/4 cup grated Parmesan

Instructions

Make the Sourdough Breadcrumbs:

  • Preheat oven to 350°F and toast sourdough cubes for 15–20 minutes until completely dry. Cool, then pulse in a food processor until fine.
  • Mix in garlic powder, onion powder, Italian seasoning, salt, pepper, and optional Parmesan.

Cut and Freeze Mozzarella

  • Slice cheese into strips about 1/2” wide and 3–4” long.
    Freeze for 30 minutes to firm up.

  • Bowl 1: Flour
